Peanut Butter Drizzled Banana Walnut Cookies

Peanut Butter Drizzled Banana Walnut Cookies

Ingredients
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 cup butter/margarine
  • 1/2 cup brown sugar
  • 2 small bananas
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/4 cup milk
  • 1/2 cup chopped walnuts
Instructions
  1. Preheat your oven to 350ºF. Line your baking sheets with parchments paper or a baking mat.
  2. In a large bowl, sift together flour and baking powder. Using a pastry cutter, cut in the butter/margarine until the mixture is crumbly. Stir in brown sugar.
  3. In a separate bowl, mash the bananas. Add in egg, vanilla extract and milk and beat gently with a fork.
  4. Add the banana mixture to the flour mixture and stir with a wooden spoon until well combined.
  5. Using a cookie scoop, scoop out batter onto a prepared baking sheet. Sprinkle with chopped walnuts.
  6. Bake for 10-12 minutes until the cookies are a golden brown. Immediately remove from the oven and transfer to a wired rack to cool completely.
  7. In a microwave safe bowl, heat the peanut butter in 15 second intervals. Stir the peanut butter between each interval until the mixture is smooth. Drizzle over the cookies and serve.
